As we all know that paper is made up of wood and wood is made up of organic compounds like cellulose and lignin. Over the years these compounds reacts in the presence of light, heat and air and begin break down releasing VOC. VOC means volatile organic compound. These compounds easily vaporized and mixed in air, and thus forming smell of old book. Organic compound called vanillin gives vanilla like smell. Benzaldehyde give almond like smell.
